Projection Mapping Questions

Hi All,
These are probably easy answers. I've been searching for generic information to try and get it right but can't seem to find anything or what should be a best practice. Some of this question isn't entirely ventuz related so I apologise, but the way I approached this method in the past is of convoluted so I would appreciate if someone had a better way.
These are the known factors I have for my project.
- Projector Resolution (1920x1080)
- The projection surface - A round table. The table in question will have plates on it also.
- The size of the tables and the size of the plate.
While I am creating some of the looks in ventuz, I will be supplied some content from the companies gfx dept that I have to play back. I have a few questions.
At this stage, we are unsure of the height of the room and the lens we will use (this will only be determined a few days before the project as it is in a different location). How I would have approached this project (and have done so) in the past without ventuz using a generic media server was to work out the size of the projected image from the height and the lens, put the W and the H into photoshop and then enter the size of the table. I then had a template for creation of content and as long as I lined up the height and used the right lens on site, it was a fairly simple exercise with lens shift if the projector didnt align correctly.
In this situation, I dont' know the height or lens yet, and also need to create a template now for the external content for the other animators to produce outside of ventuz. How do I go about creating a template for the external animation. The template would be the large table then the plates around the edge of the table. What confuses me also is what size do I make the template. Do they need to create this content at a resolution higer than 1920x1080?
I am ok with creating what i need inside ventuz, I just have never done a mapping project before with this software, but also not where I do not know the heights or lenses so I am a bit confused.
Does anyone have workflow tips? Thx
